The Tivoli Story of Cova
Ola, my name is Cova de Echevarría.
Originally from Spain, I relocated to the Netherlands two years ago. I am a gastronomist specializing in leadership and entrepreneurship, currently serving as the F&B Manager at Tivoli Doelen Amsterdam Hotel. For gastronomy and storytelling, I have a genuine passion. While I value the academic approach to food and beverages, my greatest belief lies in people and their talents. This perspective has enabled me, along with a fantastic team, to spearhead the F&B rebranding from NH Collection to Tivoli Doelen.
Throughout this journey, I have gained insights into the diverse interpretations of luxury. For some guests, luxury is waking up in the softest bedsheets and strolling to a breakfast room where a welcoming host awaits, ready to guide them on a culinary adventure along Amsterdam’s canals under the morning sun.
Luxury can also be found in the unexpected delight of a warm pastis de nata accompanying your coffee, simply because the chef overheard your fond memories of Tivoli Portugal. It is being acknowledged by our guest relations team and being invited to participate in a painting workshop led by our Rembrandt Expert. It is also the luxury of lingering in our Omber bar, where our bartender remembers your preferred cocktail and enjoying it while our culinary team enhances your experience with complimentary signature bites during our gusto moment.
For me, true luxury is being surrounded by a team of hospitality professionals who make all of this possible. It is about inspiring them so they, in turn, can inspire our guests.
At Tivoli Doelen Amsterdam, I have found the opportunity to pursue what brings me the most joy: talent development. In 2023, I became a trainer at University Northern Europe & Americas in Coaching and Supervision, and in 2024, I will be involved in developing new leadership training programs. Every Friday, I gather the hotel team for a brief training session on a gastronomic topic that fosters unity. As the F&B Manager, I take pride in working alongside my team every day to deliver the most exquisite experiences to our guests.
While Tivoli Doelen Amsterdam is a five-star luxury boutique hotel, to me, the real luxury lies in the privilege of working here.
